How the planner counts
Every supply is multiplied by a per-guest rate that depends on the kind of meal. A pancake breakfast uses two cups per person and a spoon for oatmeal but only half a knife; a fish fry or dinner uses one of each; a BBQ burns through three napkins. Plates count only against dine-in guests and to-go containers only against to-go plates. Paper towels, table covers, and trash bags use crew rules of thumb: one roll per 25 guests, one cover per eight-top table, one bag per 20 guests.
The buffer covers walk-ins, seconds, and the plate that hits the floor. Fifteen percent is the number the MEAL-4DAT app uses and is right for most ticketed events. If your ticket count is firm and prepaid, ten percent is enough; if the doors are open to the parish, twenty to twenty-five percent is safer than running out at the serving line.
